El emplazamiento de Roquefort estuvo ocupado de forma ininterrumpida desde el Neolítico hasta la Edad Media. La casa fortificada que se construyó allí en 1291/1293 consta de una torre y un patio inferior; la casa principal se construyó un poco más tarde. De esta estructura defensiva sólo queda una parte del torreón. El nuevo castillo se construyó cerca de la fortaleza medieval durante el siglo XVIII. El palomar, que ha sido restaurado, incluye un dintel esculpido fechado en 1715. La propiedad de Roquefort fue adquirida por la familia Bellanger, que plantó más de cien hectáreas de vides.
