De site van Roquefort werd voortdurend bewoond vanaf het neolithicum tot de middeleeuwen. Het versterkte huis dat er in 1291/1293 werd gebouwd, bestaat uit een toren en een lager gelegen binnenplaats; de hoofdwoning werd iets later gebouwd. Van dit verdedigingswerk is slechts een deel van de donjon overgebleven. Het nieuwe kasteel werd in de 18e eeuw bij de middeleeuwse vesting gebouwd. De duiventil, die is gerestaureerd, bevat een gebeeldhouwde latei uit 1715. Het domein van Roquefort werd gekocht door de familie Bellanger, die er meer dan honderd hectare wijnstokken aanplantte.
