Generosa y opulenta, procede de la más pura tradición troyana. Su receta se mantiene en secreto y requiere un saber hacer probado: los intestinos se cortan delicadamente a lo largo, se incorporan todos los ingredientes y la andouillette se viste a mano con un manto de tripas naturales. Tradicionalmente, el conjunto se cuece durante cinco horas en un court-bouillon aromatizado con verduras, y las proporciones son inmutables: 2/3 de intestinos por 1/3 de vísceras (la proporción de intestinos no debe ser inferior al 50%).
Para producir 1 kg de andouillette de Troyes, se necesitan unos 3 kg de materia prima. Debe embutirse a mano en una tripa natural. Para obtener la etiqueta de "auténtica andouillette de Troyes", la andouillette debe elaborarse en Aube.
