En 1131, un grupo de monjes cartujos inició la construcción de la Chartreuse du Mont-Dieu. compuesta por monjes, esta comunidad monástica vivía con sencillez y sobriedad. En 1275, se construyó el granero monástico. Hoy en día, sigue siendo el edificio más antiguo. En el siglo XVIII, la Chartreuse du Mont-Dieu poseía un imperio económico de 4.200 hectáreas. Hasta hace poco, el pabellón Saint-Etienne, el pabellón Saint-Bruno y el pabellón del jardinero, construidos en el siglo XVI, seguían en pie, visibles desde la carretera y los senderos que bordean la finca. Desgraciadamente, fueron gravemente dañados por un incendio el 2 de noviembre de 2025.
