Après une dizaine d'années de brassage et 2 ans de cours de brasserie à Gand, Frank et Inge ont décidé de donner plus de vie à leur hobby et de le combiner avec un local de dégustation.

Pour cela, ils ont construit le café et la brasserie à Olmen. Toutes les bières sont d'ailleurs brassées et embouteillées dans les murs de De Schieve. Elles sont dégustées dans les verres "schieve" qu'ils ont eux-mêmes façonnés.
