Saint-Aulaye si trova al confine tra i dipartimenti della Dordogna e della Charente. L'unica bastide della regione del Périgord Vert vi accoglie su un promontorio che domina la valle della Dronne. Questa è la regione del Cognac AOC e, oltre a una chiesa romanica del XII secolo con una facciata in stile Saintonge, Saint-Aulaye ospita un Ecomuseo del Cognac, ospitato in un ex edificio agricolo.
Partecipate a un tour cronologico e scoprite lo spirito e le abilità del distillatore, del maestro di cantina, dell'enologo e del bottaio. Visitate le cantine, imparate i segreti della vinificazione e ammirate una serie di oggetti tradizionali della vinificazione, tra cui un alambicco del XVIII secolo e un torchio a doppia vite.
