Paul collabora con molte aziende agricole locali e propone specialità come le sue carni stagionate, come le costate di manzo Limousin o Wagyus, o il vitello da latte. Un vero bistrot dove ci si incontra volentieri!
paul è la quarta generazione di una famiglia di caffettieri Brivistes. Ha iniziato la sua carriera come sommelier in un ristorante stellato di Limoges e poi è andato in Inghilterra per imparare la lingua e migliorare le sue competenze. Ha continuato la sua carriera come sommelier presso Michel Guérard prima di tornare nella sua terra natale nel 2013 per creare Les Frangins, che da allora è diventato "Chez Paulo".
