Romain, giovane enologo epicureo di 30 anni, nel 2014 si è posto una sfida: rilevare Château Haut Bernasse, una proprietà di 14 ettari, coltivata con 11 ettari di uve bianche (Semillon, Muscadelle, Sauvignon Blanc e Gris) e 3 ettari di uve rosse (Cabernet Sauvignon, Merlot e Cabernet Franc) in conversione all'agricoltura biologica.
Lavora queste vigne di 35 anni in modo tradizionale, con un filare inerbito e uno arato, con l'obiettivo di produrre vini di qualità su questo terroir eccezionale.
