Graanmarkt -- De Graanmarkt is een typisch Gilbert van Schoonbeke project. Gilbert kocht oefenterreinen van de schuttersgilden en bedacht een dubbele economische functie voor het gebied. Centraal binnen de nieuw aangelegde straten ontwierp hij een plein dat moest dienen als nieuwe graanmarkt en op het voorste deel van dat plein bouwde hij het Tapissierspand, een verkoophal met winkeltjes, een herberg en opslag- en woonkelders voor de tapijthandelaren. Het gebouw had een indrukwekkende afmeting: 80 x 37 meter!
