Brustem werd voor het eerst schriftelijk vermeld in 1114 als Brustemia, van het Germaanse brust en haima .
Vóór 1175 komt Brustem nauwelijks in officiële stukken voor. In 1139 geeft Alberon II van Namen, prins-bisschop van Luik, een opsomming van alle kerken die in de abdij van Sint-Truiden met de Pinksterdagen hun bijdrage moesten offeren; daar was ook Brustemium bij.
