Het kasteel, verwoest tijdens de Dertigjarige Oorlog, werd herbouwd van 1655 tot 1659. In 1722 vond een uitbreiding plaats, die pas in 1761 voltooid was. Kasteel Gymnich werd gerestaureerd van 1969 tot 1973. Als voormalig gastenverblijf van de Duitse regering bood het kasteel onderdak aan prominente figuren zoals koningin Elizabeth, koningin Silvia, koning Juan Carlos I en talloze leden van de Duitse regering. Vanaf 1998 woonden de Ierse muzikanten van de Kelly Family er enkele jaren.
