Cuéllar is een gemeente in de Spaanse provincie Segovia in de regio Castilië en León met een oppervlakte van 273,33 km². Cuéllar telt 9.501 inwoners .De gemeente bezit de oudste nog bestaande windmolen van Spanje. De datum waarop de molen, El Cubo genaamd, gebouwd werd is niet gekend, maar het duikt in 1496 voor het eerst in een geschrift op. In dat jaar werd het gebouw verkocht aan Francisco I Fernández de la Cueva y Mendoza, tweede Hertog van Alburquerque.
