Aumont-Aubrac is een concentratie van verschillende eeuwen architectuur.
Het VVV-kantoor is typerend voor de laatmiddeleeuwse architectuur met drie verdiepingen, met op de begane grond een grote boog, op de verdiepingen de woonvertrekken herkenbaar aan de kruisvensters en in de kelder imposante halfronde bogen.
Andere huizen, zoals dat aan de Avenue de la Gare, zijn typisch voor de architectuur van de twintigste eeuw, waar de gebouwen indrukwekkend zijn door zowel hun opmerkelijke omvang als hun imposante architectuur.
In de vier hoeken van het dorp staan ook een aantal merkwaardige gebouwtjes, zoals de tuinpaviljoens, herkenbaar aan hun puntdaken.
