Saillon nævnes først i 1052 som castellum Psallionis. Kommunen var tidligere kendt under det tyske navn Schellon, men det navn bruges ikke længere.
Saillon har et areal, pr. 2009, på 13,7 kvadratkilometer. Af dette areal er 5,17 km2 eller 37,6% anvendt til landbrugsformål, mens 2,81 km2 eller 20,5% er skovklædt. Af resten af jorden er 1,12 km2 eller 8,2% bebygget, 0,31 km2 eller 2,3% er enten floder eller søer, og 4,27 km2 eller 31,1% er uproduktivt land.
