Slotet i byens centrum blev bygget i 950 på en bakke, de første huse i Monthey omgav det. Monthey nævnes første gang i 1215 som Montez. I det 13. århundrede ejede greverne af Savoy landsbyen og dens område. I 1352 gav grev Amédée VI mere frihed til indbyggerne. I den første del af det 14. århundrede var der flere industrier, herunder silkeproduktion og møller.
Monthey har et areal, pr. 2009, på 28,6 kvadratkilometer. Af dette areal anvendes 7,86 km2 eller 27,5% til landbrugsformål, mens 12,91 km2 eller 45,1% er skovklædt. Af resten af jorden er 5,47 km2 eller 19,1% bebygget, 0,43 km2 eller 1,5% er enten floder eller søer, og 1,91 km2 eller 6,7% er uproduktivt land.
