Im Jahr 1994 eröffneten Nathalie Louis und Jacques Pougin ein Lebensmittelgeschäft in Bouillon. Sie beschlossen, zu ihren Käsesorten auch ein Sortiment regionaler Biere anzubieten, und bald wurden etwa fünfzig Biere im Geschäft angeboten. Da das Interesse geweckt war, begann Pougin mit eigenen Bierrezepten zu experimentieren und ließ 1996 sein erstes eigenes Bier Cuvée de Bouillon brauen. Da das Bier gut verkauft wurde, wurde die Installation einer eigenen Brauerei in Aussicht genommen. Im Juni 1998 wurde die Brauerei offiziell im Lager hinter dem Geschäft eröffnet. Der Laden wurde von da an nur noch ein Geschäft für regionale Biere. Es wurden nicht nur eigene Biere, sondern auch originelle Biere für Dritte gebraut.
