Die Burg Grimmenstein war eine festungsartig ausgebaute Höhenburg, Vorgängerbau des Schlosses Friedenstein in Gotha. Sie wurde vermutlich im 11. Jahrhundert gebaut und 1567 endgültig geschleift.
Erstmals erwähnt wird die Burg Grimmenstein im Jahr 1215. Die Anlage war als Festung ähnlich der Veste Coburg konzipiert. Ihr Hauptzweck bestand zunächst in der Sicherung der mittelalterlichen Reichsstraße Via Regia, die vom Rhein bis nach Schlesien hier vorbeiführte. Daneben diente sie im 13. und 14. Jahrhundert als Sitz der Thüringer Landgrafen Albrecht und Balthasar.
