Le bâtiment principal du château a été construit entre 1599 et 1606. À partir de 1960, un couvent de Cisterciennes a été installé sur le site du château de Sostrup, avec une maison d'hôtes et de retraite attenante. Les religieuses ont construit au sud-ouest du château un nouveau couvent, qui a été occupé en 1992, avec sa propre église conventuelle. En 2012, l'abbaye cistercienne de Sostrup a été dissoute. Le château de Sostrup a été vendu le 1er juin 2014 aux frères et sœurs Kirsten et Anders Bundgaard, qui y ont établi un hôtel et un centre de conférences.
