Beaune était le lieu de naissance de Gaspard Monge (1746-1818), un mathématicien célèbre. Gaspard Monge ou le comte de Péluse était un mathématicien français qui est devenu connu pour avoir établi la géométrie descriptive, le dessin scientifique. Monge a joué un rôle important dans la Révolution française et était cofondateur de l'École polytechnique en 1794. En 1800, il s'est installé à Anvers et y a fondé la Haute École maritime d'Anvers. Il est l'un des 72 Français dont les noms sont inscrits sur la tour Eiffel.
