Il nome 'Sault' deriva dal latino 'Saltus', che significa 'terra di foreste'. Gli scavi hanno dimostrato che l'attuale Sault ha le sue origini in tempi preistorici. A nord-est di Sault, nel Bois du Défens, sono stati ritrovati oggetti dell'epoca preistorica nei pressi di una caverna. A ovest del villaggio, sulle rive del fiume, sono stati trovati resti risalenti al periodo dell'Impero Romano.
Il villaggio si affaccia su 'Val de Sault', una bellissima vallata con grandi campi di lavanda. Oggi, il turismo gioca un ruolo importante nel villaggio, come dimostra la presenza di numerosi caffè, ristoranti e negozi che vendono prodotti locali e regionali. Come a Bédoin, incontrerai sicuramente ciclisti a Sault. Infatti, Sault è, proprio come Bédoin, uno dei tre punti di partenza 'ufficiali' per scalare il vicino Mont Ventoux.
