Aumont-Aubrac è un concentrato di architetture di diversi secoli.
L'Ufficio del Turismo è tipico dell'architettura tardo-medievale a tre piani, con il piano terra caratterizzato da un grande arco, i piani superiori che ospitano gli alloggi identificabili dalle finestre a croce e il seminterrato caratterizzato da imponenti archi semicircolari.
Altre case, come quella di Avenue de la Gare, sono tipiche dell'architettura del XX secolo, dove gli edifici colpiscono sia per le notevoli dimensioni che per l'imponenza dell'architettura.
Ai quattro angoli del villaggio si trovano anche alcuni piccoli edifici curiosi, come i padiglioni da giardino, riconoscibili per i loro tetti a punta.
