Omstreeks 1100 verwierven de graven van Fenis de plaats en begonnen ze deze te vestigen. Burkhart van Fenis bouwde aan het begin van de 12e eeuw de burcht. Erlach was een belangrijke basis van de graven van Neuenburg. Rond 1265 ontving Erlach van graaf Rudolf II van Neuenburg-Nidau de handvest. Als ministerialen van de graven dienden de ridders van Erlach als burchtmannen op het kasteel.
In 1474 viel Erlach aan Bern en werd het kasteel de zetel van de bernese landvoogd. Onder de landvoogden op kasteel Erlach bevonden zich ook bekende persoonlijkheden zoals Niklaus Manuel Deutsch en Johann Rudolf Sinner van Ballaigues. Vanaf 1874 was het kasteel een staatsopvoedingshuis.
