De Saarburg is de ruïne van een hoogteburcht op een zuidelijke bergtop van de 206,5 m hoge Schloßberg boven de stad Saarburg in de Landkreis Trier-Saarburg in Rheinland-Pfalz. Het is een van de oudste hoogteburchten in het westen van Duitsland.
De vermoedelijk in de 10e eeuw gebouwde burcht wordt voor het eerst in 964 schriftelijk vermeld. In dat jaar werd ze door het aartsbisdom Trier als leen aan graaf Siegfried van Luxemburg overgedragen. Na de dood van Siegfrieds zoon Adelbero in 1046 viel de burcht terug aan het aartsbisdom Trier.
