Het gebouw werd in 1562 als stadhuis van de stad Gifhorn opgericht. Om reizigers en handelaren op de door Gifhorn leidende hoofdwegen te imponeren, werd het versierd met prachtige houtsnijwerken.
Op de bovenverdieping bevonden zich de ambtsruimten en een feestzaal, op de begane grond de raadswijnkelder, op bepaalde momenten ook wel raadsherberg genoemd. Dit werd destijds voor enkele jaren verhuurd aan de hoogstbiedende eigenaar. In 1843 werd het huis verkocht. Het etablissement is sindsdien door wisselende eigenaren geëxploiteerd.
