Después de unos diez años de elaboración de cerveza y 2 años en la escuela de cerveceros en Gante, Frank e Inge decidieron darle más vida a su hobby y combinarlo con un local de degustación.

Para ello construyeron el café y la cervecería en Olmen. Todas las cervezas, de hecho, se elaboran y embotellan dentro de las paredes de De Schieve. Se beben en los vasos "schieve" que ellos mismos han creado.
