En tiempos de Hildegard, Bingen no solo estaba rodeado de viñedos, sino que también crecían vides en muchos lugares de la ciudad, como ahora en el Kloppberg. También el monasterio de Hildegard en el Rupertsberg estaba rodeado de viñedos. Las hermanas también tenían viñedos en Rheinhessen y el Palatinado. El vino desempeñaba un papel importante en la alimentación porque, a diferencia del agua, no estaba contaminado por bacterias y se consideraba un proveedor de vitaminas. Hildegard escribió sobre las propiedades curativas del vino de la siguiente manera:

diferente al de otras hierbas.
