Ce jeune Figeacois, qui a fait ses armes au Louis XV à Monaco puis aux Belles Rives à Juan-les-Pins, s’impose donc comme le digne successeur d’Alexis Pélissou. Ses grattons de volaille fermière aux oignons caramélisés ou son dos d’agneau à la sarriette et aubergine fondante en sont des preuves, tout comme bien entendu ses plats à base de truffe.
