De productie van de wijn met bubbels is ontstaan in de Penedès-regio, waar je meer dan 80 cavahuizen kan bezoeken. Vandaag is cava ongetwijfeld het bekendste Catalaanse icoon, maar het is pas midden de 19e eeuw dat de cava-industrie een flinke boost kreeg.
