Som biokemiker med specialuddannelse inden for bryggeri og med en stor grund på den lille gård, som hun havde erhvervet sig, startede Mélissa Résimont sammen med sin bror Nicolas i 2013 eventyret. I begyndelsen producerede de cirka 20 liter, i 2016 allerede 675 hektoliter. Udover deres fire faste øl kreerer Mélissa og Nicolas en eller to gange om året et specialbryg i begrænset oplag.
