Als Biochemikerin mit einer Spezialausbildung der Brauerei und mit einer großen Fläche im von ihr erworbenen kleinen Bauernhof startete Mélissa Résimont mit ihrem Bruder Nicolas 2013 in das Abenteuer. Zu Beginn produzierten sie ungefähr 20 Liter, 2016 bereits 675 Hektoliter. Neben ihren vier permanenten Bieren kreieren Mélissa und Nicolas ein oder zwei Mal im Jahr ein Spezialgebräu in limitierter Edition.
