Heist si trova sulla riva della Geest, adiacente alla Marsch di Haseldorf, di cui il territorio comunale ha anche una parte. Il comune confina a sud con Holm, a ovest con Hetlingen, Haseldorf e Haselau, a nord con Moorrege e a est con Appen.
La prima menzione documentata di Heist risale al 1276. Apparteneva alla nobile famiglia von Heest. Il cavaliere Hartwich von Heest vendette il villaggio nel 1361 al monastero di Uetersen. A metà del XIX secolo, la popolazione era di circa 400 abitanti e cambiò poco fino alla Seconda Guerra Mondiale, raggiungendo circa 500. Dopo il 1945, la popolazione crebbe rapidamente a circa 1500 a causa dell'arrivo di rifugiati dalle aree orientali. Attualmente si attesta attorno a 2800.
