Whitby ospita tradizionalmente un'arte orafa e di gioielleria artigianale basata sul jet, il Whitby Jet, che si trova nella zona. Questo fossile nero viene rinvenuto intorno alle scogliere di Whitby ed è stato già usato nell'Età del Bronzo per realizzare perle e altri gioielli. I Romani estraevano il jet su larga scala. Il Whitby-jet era al culmine della sua popolarità a metà del XIX secolo, quando la regina Vittoria lo scelse per i suoi gioielli funebri. Il jet (gagato) è una sostanza minerale organica amorfa. Si tratta di un mineraloide ma non di un minerale. Il jet ha un colore nero o bruno scuro e talvolta contiene inclusioni di pirite, che gli conferiscono una lucentezza color rame o metallica. Dopo la morte del Principe Alberto nel 1861, la sua vedova Regina Vittoria si vestì di nero per il lutto.
