Certaldo è nota per le sue speciali cipolle fin dal medioevo. Boccaccio, chi altro, ne ha già scritto nel suo Decamerone . La cipolla si trova anche nello stemma di Certaldo. Ne esistono due varietà: la “statina”, una cipolla tonda dal colore violaceo e dal gusto morbido e dolce, e la “vernina”, una cipolla dal colore rosso intenso e dal sapore piccante. Con la statina si ricava spesso un prodotto tipico di Certaldo: la marmellata di cipolla , una marmellata di cipolle davvero deliziosa in abbinamento, ad esempio, al pecorino .
