Beaune was de geboorteplaats van Gaspard Monge (1746-1818), een bekende wiskundige. Gaspard Monge of de graaf van Péluse was een Frans wiskundige die bekend werd door het opstellen van de beschrijvende meetkunde, het wetenschappelijk tekenen. Monge vervulde een rol van belang in de Franse Revolutie, en was medeoprichter van de École polytechnique in 1794. In 1800 trok hij naar Antwerpen en richtte er de Hogere Zeevaartschool Antwerpen op. Hij is een van de 72 Fransen wier namen op de Eiffeltoren zijn aangebracht.
