Efter høstperioden i de højeste områder, begyndte man at bygge en kanal for at føre vandet fra Barranco del Infierno til de lavere områder.
Herfra flød vandet mod området ved den nuværende indgang til Barranco del Infierno, nord for byen, nær Molí Vell.
Når vandstrømmen fra floden Adeje var omdirigeret, blev den brugt til at forsyne befolkningen, til at vande sukkerrødenes marker, som motor til sukkermøllen og vandmøllerne, der blev brugt til fremstilling af gofio.
I Adeje var der fire vandmøller: to på Calle de los Molinos, en på Concepción og en på Hoya Grande.
