Det var munke, der begyndte at brygge i abbediet. I løbet af århundrederne har de forbedret og perfektioneret ølproduktionen. I dag er disse abbediøl inspireret af de oprindelige opskrifter, hvilket betyder, at de er brygget ifølge traditionen for
øl med eftergæring i flasken. Med denne fremstillingsproces, der tager 6 til 8 uger, opnås høje alkoholprocenter og de komplekse aromaer, der er så karakteristiske for Val-Dieu-øl.
