Mönche begründeten die Brauereitradition der Abtei und verfeinerten ihre Kunst der Biererzeugung im Lauf der Jahrhunderte. Die heute gebrauten Biere basieren auf den Originalrezepten und der traditionellen Nachgärung in Flaschen. Dieser Herstellungsprozess erfordert 6-8 Wochen und ermöglicht die Ausbildung eines hohen Alkoholgehalts und der komplexen Aromen, die den Charakter des Sortiments Val-Dieu ausmachen.
