Der Burgstall Ebermannstadt ist eine abgegangene mittelalterliche Turmhügelburg auf der Jurahöhe Wacht Knock westlich von Ebermannstadt im Landkreis Forchheim in Bayern. Die Burg zählte zu den mächtigsten Turmhügelburgen.
Die ehemalige Burganlage aus dem 11. Jahrhundert, die vermutlich als Fliehburg diente, mit einer Gesamtfläche von etwa 2,5 Hektar besitzt ein Hügelplateau mit einem Durchmesser von über 30 Metern und wird von der 120 × 100 Meter großen Vorburg vollständig umschlossen. Der planierte ovale fünf Meter hohe Kernhügel wird im Abstand von 22 Metern von einem hufeisenförmigen Außenwall umgeben.
