Fueron los monjes quienes comenzaron a elaborar cerveza en la abadía. A lo largo de los siglos han mejorado y perfeccionado la producción de cerveza. Hoy en día, estas cervezas de abadía están inspiradas en las recetas originales, es decir, elaboradas según la tradición de las
cervezas con refermentación en botella. Con este proceso de fabricación, que dura de 6 a 8 semanas, se obtienen altos porcentajes de alcohol y los complejos aromas que son tan característicos de las cervezas de Val-Dieu.
