La crise du phylloxera (vers 1870) détermine la vocation viticole de Montady. Sa forme naturelle en bassin fermé permet une immersion des vignes, moyen de lutte efficace contre ce fléau. Un réseau d'irrigation gravitaire est mis en place, tirant l'eau du canal du Midi. L'introduction de nouvelles cultures, notamment fourragères et légumières, plus exigeantes en eau, impose l'installation d'un second réseau d'irrigation après 1960. Il s'agit de conduites souterraines d'eau sous pression, permettant l'arrosage par aspersion.
