La Saarburg è la rovina di un castello su un promontorio montagnoso a sud di 206,5 m s.l.m. del Schlossberg, sopra la città di Saarburg nel distretto di Trier-Saarburg in Renania-Palatinato. È considerata uno dei castelli montani più antichi della Germania occidentale.
Il castello, probabilmente costruito nel X secolo, viene menzionato per la prima volta in documenti nel 964. In quell'anno fu ceduto dall'arcivescovato di Treviri come feudo al conte Siegfried di Lussemburgo. Dopo la morte del figlio di Siegfried, Adelbero, nel 1046, il castello tornò all'arcivescovato di Treviri.
