De allereerste biertjes werden gebrouwen in een garage in Rue de la Mer, in Pousset. "De brouwsels
van 20 liter werden met het hele gezin gemaakt en opgedronken bij een lekkere maaltijd." Michaël volgde cursussen en de bierbrouwerij was officieel een feit. De naam van de brouwerij en de bieren
komt van het Franse "eau", water, het belangrijkste ingrediënt van bier. En het is een knipoog naar de straatnaam waar de brouwerij is gevestigd.
