Er wordt geclamid dat het aperitivo een Milanese uitvinding is. Het aperitivo is niet exclusief een Milanese uitvinding, maar Milaan speelde wel een grote rol in de ontwikkeling van de hedendaagse vorm en beleving van het aperitivo-ritueel. De oorsprong ligt in Turijn, waar eind 18e eeuw vermouth werd uitgevonden door Antonio Benedetto Carpano en waar het concept van een drankje met kleine hapjes zich begon te ontwikkelen.
