Han arbejdede meget omhyggeligt og tog kontakt til venner og bekendte fra Grækenland, Tyrkiet og Italien, søgte efter autentiske småkagerecept, gav dem sit eget twist.
Hugo smagte og lod smage, indtil han præcis havde, hvad han ønskede: fire småkager, hver med deres egen, typiske smag: Findikli (tyrkisk), Kourabiéthes (græsk), Cantucc(ini) (italiensk) og Pallet des dames ( belgisk).
