Grabau blev første gang nævnt i 1433 i skriftlige kilder. Mesolitiske fund viser den første bosættelse i området. Grabau gravpladsen peger på en bosættelse i bronzealderen. I løbet af tiden blev det til en gård for Godset Borstel. Efter at Borstel godset var blevet solgt i 1804, blev Grabau adskilt og selv hævet til adelig gods. I 1863 fik stedet sin første egen skole. I 1907 fik Grabau via Elmshorn-Barmstedt-Oldesloer jernbanen en jernbaneforbindelse, der blev nedlagt i 1973. Efter opløsningen af godskommunerne blev Grabau sammenlagt med Neritz til en landkommune. I 1942 blev foreningen mellem Grabau og Neritz annulleret, og begge landsbyer blev selvstændige kommuner.
Siden 1948 har Grabau tilhørt Amt Bad Oldesloe-Land. Gennem opfyldning af godsets arealer er indbyggertallet siden steget jævnt.
