Det oprindeligt bygget knoglehuggerhus fra 1529 er det mest kendte bindingsværkshus i Hildesheim. I dag rummer den fredede bygning blandt andet en restaurant og Hildesheim bymuseum.
Knoglehuggerhuset var gildehuset for slagterne. Som de andre Hildesheim håndværkerforeningers laugshuse ligger den bindingsværkbygning fra den tyske renæssance på markedspladsen i den gamle by, overfor rådhuset. På grund af den repræsentative, høje smykkefacade blev bygningen betragtet som "verdens smukkeste bindingsværkshaus", hvilket menes at stamme fra en bemærkning af Eugène Viollet-le-Duc i det 19. århundrede.
