Hotellet-Dieu i Carpentras, bygget i midten af det 18. århundrede, var et af hospitalerne i hovedstaden i Comtat Venaissin. Selvom det ikke var det første i Carpentras, var det det mest imponerende. Det efterfulgte fem andre hospitaler, hvis driftsperioder ofte overlapmede, og det blev bestilt af Joseph-Dominique d'Inguimbert, kendt som dom Malachie, biskop af Carpentras, og den rolle, det spillede i to århundreder, er ikke uafhængig af historien om dets forgængere.
