Saraburi har været en vigtig by siden oldtiden. Det antages at være blevet grundlagt omkring 1549 under kong Maha Chakkraphats regeringstid af Kongeriget Ayutthaya. Det antages, at kongen havde beordret at kombinere nogle dele af Lop Buri og Nakhon Nayok og oprette Saraburi-provinsen med det mål at være et centrum for mobilisering af borgerne i krigstider. Derfor har historien om Saraburi fra Ayutthaya-perioden normalt været relateret til kampe og krige.
