Edelkastanienbäume sind ein typischer Baum in den Dörfern der Cevennen. Diese Bäume waren die lokale Quelle für Stärke. Da der Boden auf den Schiefern nicht so gut für den Kartoffelanbau geeignet ist, als dies im 17. und 18. Jahrhundert in Europa zur Hauptquelle für Stärke wurde, hielten die Einheimischen an der Kastanie fest. Heute findet man in den Cevennen noch viele Rezepte mit Kastanien.
