Kastanjebomen zijn een typische boom rond de dorpen van de Cevennen. Deze bomen waren de lokale bron van zetmeel. Omdat de grond op de leistenen niet zo groot was om aardappelen te verbouwen toen dit de belangrijkste zetmeelbron werd in de 17e en 18e eeuw in Europa, bleven de lokale bevolking de kastanjeboom gebruiken. Tegenwoordig vind je in de Cevennen nog steeds veel recepten met kastanje. Probeer de Crème de Marron!
